Instructions
1. Heat butter in a stockpot over medium-low heat. 2. Sauté onion, garlic, and a pinch of salt and pepper until the onion turns translucent and the garlic becomes fragrant. 3. Increase the heat to medium and add ground sausage. 4. Cook until browned, breaking it apart with a spatula. 5. Pour the vegetable stock and marinara sauce, and bring the mixture to a boil. 6. Let the soup simmer for 30–45 minutes, stirring occasionally to develop the flavors. After simmering, reduce heat to low and stir in heavy cream. 7. Serve with a topping of ricotta, Parmesan cheese, and fresh basil.
